Aged garlic extract is an extract of garlic bulbs fermented in a diluted alcohol solution for up to two years. This long-aging fermentation process breaks down garlic's sulfur-containing properties, creating an odorless substance rich in active bioavailable compounds.

One of these compounds, S-allyl-cysteine (SAC), is believed to promote healthy cholesterol levels. A derivative of the amino acid cysteine, SAC also demonstrates high antioxidant activity, giving it the potential to help protect healthy cells from the damaging effects of free radicals.
